1.You should try a yeast starter. Just use a bit of light malt, and boil it enough to pasteurize (only use about a quart of water). Throw this into an empty growler (you know you have one), cool it, add yeast, top it with an airlock, and let it go about three days. You end up with 2x the yeast you would've had, plus you know its alive.

As far as the cidery beer, Consider yourself lucky, I bottled too early once and had exploding bottles. Needed to dump 2 cases of belgian white in the dumpster behind Quiznos.
